Lemon thyme (Thymus citriodorus) is exactly what its name says it is: a variety of thyme that smells like lemon!
More specifically, it is a variety of T. serpyllum (wild thyme). Its two-tone leaves, grey-green and white, are larger than those of common thyme. It is considered one of the hardiest varieties and is known for its particularly intense aroma.
It takes its time to grow, and it is not so fond of drought: like basil and mint, lemon thyme needs plenty of water. It is widely used in gardening, but you shouldn’t overlook its role as a secret ingredient in your kitchen either!
